CEFALO AL CARTOCCIO
( il cefalo è un pesce a basso costo, ma ricco di proteine,vitamina b6, potassio e fosforo)

1 cefalo abbastanza grosso
3 pomodori di pachino
1/2 bicchiere di vino bianco
abbondante olio d’oliva
prezzemolo tritato
1 peperoncino fresco
1 spicchio d’aglio
1 cipolla fresca
sale e origano
Squamiamo e puliamo il cefalo.dentro la pancia mettiamo il prezzemolo, l’aglio e la cipolla, adagiamolo in una pirofila da forno con carta stagnola e carta forno,aggiungiamo il sale i pomodori a dadini,l’origano e il vino , chiudiamo il tutto e cuciniamo in forno a 250° per 30 minuti.
Come potete vedere con il sughetto si possono condire gli spaghetti , aggiungendo del prezzemolo tritato , del peperoncino fresco e del pecorino grattugiato
